Poached Salmon (Native Canadian)
5 lbs. fresh salmon (cleaned with head and tail removed)
2 large onions, chopped
2 large celery stalks
2 large carrots, scraped
2 large bay leaves
1 teaspoon of salt
Put fish in a large roasting pan. Put half of the chopped onions in
the cavity of the fish and the remainder around the fish.
Place celery and carrots on fish. Add bay leaves and salt, plus sufficient
water to cover fish. Bake at 400 degrees Fahrenheit for 15 minutes,
then at 350 degrees Fahrenheit, covered for 30 minutes.

Shrimp Omelet
(Filipino)
3 eggs
1 pound of shrimps, shelled and de-veined
spring onions
2 cloves of garlic, crushed
salt and pepper to taste
oil
Whisk eggs. Set aside. Heat oil in pan. Add green onions, garlic and
shrimp. Sautee. When shrimp is cooked, pour egg and make an omelet.
Season with salt and pepper to taste.
