Ceviche (Peruvian)

For this Peruvian dish you can use any firm white fish fillet cut into ý inch cubes. You can also use clams, shrimps, scallops or whatever else is available. You can even mix them together. If using large scallops, cut them into 4 pieces. Leave small scallops whole.

Ingredients:

2 lbs (908 g) of seafood
ý cup (200 ml) of freshly squeezed lime juice to half cover the seafood cubes
1 small red onion, thinly sliced and marinated in slightly salty water for 10 min
1 soupspoon (30 ml) cup of freshly chopped parsley
1 rib of thinly sliced celery
º fresh finely minced (to taste) red-hot chilli (jalapeno) pepper
ý teaspoon (4 ml) freshly ground black pepper
1 teaspoon of blended yellow chilli sauce or a few drops of Tabasco (to taste)
1 small clove of garlic, chopped
Salt to taste

Preparation:

Mix the seafood cubes well and marinate them in cool slightly salty water for 15 min in order to hydrate and whiten them. Then drain all the water and add limejuice. Let marinate in fridge for 15 min, stirring at least once while inside. Take out of fridge and combine yellow chilli sauce (or Tabasco), garlic, black pepper, celery and salt with the marinade, add remaining ingredients (drained red onion, parsley and hot pepper on top. Cover and refrigerate for another 15 min. The cubes will turn opaque and flavours blend together.
Marinating for a longer time will make the cubes whiter and less soft.

Serving:

Before serving, stir ingredients together. Makes 5 small servings. May be served in small dishes over a bit of lettuce, with slices of boiled corn, sweet potatoes and regular potatoes on the side. May be served with beer because is a hot dish.

Date Bread (Bermuda)

Ingredients:

1 cup chopped dates
1 cup boiling water
1 tsp. baking soda
1 tsp. butter
1 cup sugar
2 cups flour
2 egg (slightly beaten)
1 tsp. baking powder
1/2 tsp. vanilla extract
pinch salt
1/2 cup chopped walnuts

Directions:

Preheat oven to 375 degrees. Soak dates in boiling water for 5 minutes. Lightly grease a 6" x 9" loaf pan with vegetable shortening or butter.

In a large bowl combine the baking soda, butter, and eggs. Whisk until smooth. Now add the sugar, salt, nuts, dates, vanilla and whisk to combine. Add flour until just combined. Bake for 1 hour.
